Banana Bread


LOVE!! Banana Bread for breakfast or even just a snack.

Banana Bread

Ingredients:

  • 1/2 cup butter, melted
  • 1 cup granulated white sugar
  • 2 eggs
  • 1 t vanilla
  • 1 1/2 cup flour
  • 1 t baking soda
  • 1/2 cup sour cream
  • 2 or 3 medium bananas, sliced

Directions:

  1. Preheat oven to 350 and grease a 9x13 loaf pan.
  2. In medium bowl combine flour, baking soda, and salt.
  3. In mixer, mix butter and sugar together.
  4. Add in eggs and vanilla, mix well.
  5. Add dry mixture to wet mixture gradually mix until smooth.
  6. Add sour cream and mix well.
  7. Add in sliced bananas. (If using stand mixer they will mash up on their own while mixing. If mixing by hand, use potato masher to mash then fold in.)
  8. Pour battier into pan and smooth out with spatula.
  9. Bake for 1 hour or until toothpick inserted comes out clean.

Savory Mustard Chicken



Chicken marinated in savory dijion mustard and sherry vinegar with thyme and oregano.


Savory Mustard Grilled Chicken

Ingredients 

Marinade for 2 chicken breast

  • 1/2 cup sherry vinegar
  • 1t salt (optional)
  • 1/4 cup dijion mustard
  • 1/2 t pepper
  • 1/2 t oregano
  • 1/2 t thyme
  • 1 cup olive oil
  • 2 chicken breast
  • mozzarella cheese, shredded
  • salad greens
Directions

  1. whisk together all ingredients for marinade in a large bowl.
  2. place chicken in bowl making sure marinade covers it.
  3. cover bowl and place in fridge to chill for at least 30 min.
  4. when ready, heat grill (we use our george foreman) 
  5. grill chicken until done.
  6. the chicken is breast alone or with a salad with an light italian dressing.
  7. sprinkle some mozzarella cheese on top.

Classic Breakfast



Cheddar Cheese Scrambled Eggs
Bacon
Toast with Apple Jelly



Cheddar Cheese Scrambled Eggs
Serves 4

Ingredients
  • 8 eggs
  • 1/2 can of cheddar cheese soup
  • 1/4 cup of sour cream
  • salt and pepper to season
  • olive oil or bacon grease 

Directions

  1. Heat oil or grease in large skillet.
  2. In mixing bowl crack eggs. Add soup, sour cream, and salt and pepper.
  3. Beat mixture well with whisk.
  4. Pour into hot skillet. Let cook about 3 minutes before scrambling.
  5. Cook until eggs start to turn slightly brown. (we like our eggs slightly burnt.)
  6. Serve with bacon and toast with apple jelly.
